Best Breakfast Ideas

We’ve been told for years that breakfast is the most important meal of the day, and during isolation, it's even more important to ensure we maintain a healthy diet. But why is breakfast the most important meal of the day?

Eating breakfast will kickstart your metabolism first thing in the morning and ensure you are fueled ready for work or school. It has been said that eating a healthy breakfast helps improve concentration and keeps you focused throughout the day.

First thing in the morning your blood sugar levels will be low which is what is needed to make your muscles and brain work – eating breakfast will replenish these levels. Breakfast is also a good opportunity to get nutrients from healthy foods like dairy, grains and fruits.

Below I have provided the recipes of three quick and easy healthy breakfasts I eat to fuel my body in preparation for the day.

 

Tomato & Spinach Egg Muffins

Ingredients:

1 large handful of Spinach (shredded)

12 cherry tomatoes (halved)

10 large eggs

Salt and pepper

Method:

1)    Preheat oven to 175° and lightly spray a 12-cup muffin tray with cooking spray.

2)    Evenly distribute the spinach between the 12 muffin cups and top with two cherry tomato halves.

3)    Whisk together the eggs, salt and pepper in a large jug then pour mixture evenly between the 12 cups and bake for 15-20 minutes until firm and lightly golden.

4)    Once cooled, you can store them in the fridge.

 

Smoothie

Ingredients:

1 ripe banana

½ cup blueberries (could be frozen)

½ cup of cold water

1 tablespoon chia seeds

1 tablespoon flaxseed

1 tablespoon oats

1 tablespoon almond butter

Method:

1)    Place all ingredients into a blender or food processor.

2)    Pulse until smooth – adding a dash more water if needed.

 

Berry Overnight Oats

Ingredients:

½ cup of Quaker Oats

½ cup of non-fat milk

½ cup non-fat Greek yoghurt

1 cup mixed berry fruits

1 teaspoon chia seeds (optional)

Method:

1)    Add Quaker oats to a container or your choice and pour in milk

2)    Layer Greek yoghurt, fruit and chia seeds

3)    Refrigerate overnight ready for breakfast in the morning!

 

These recipes are healthy, nutritious and delicious and considering I am not very good in the kitchen (understatement) these recipes are easy to follow that even I can make them!
